Black Garlic Salsa
The black garlic salsa from Le Garde Manger restaurant is ideal for giving a “Kick” to your Mexican dishes.
It is wonderful for garnishing your tacos, your burritos, a dish of nachos or simply for dipping tortillas.
Ingredients
- 1/2 onion
- 40g black garlic or black garlic paste
- 1/2 cucumber, seeded and diced
- 2 tomatoes, seeded and cut into quarters
- 1 jalapeno pepper, seeded and finely chopped
- zest and juice of a lime
- 2 tbsp. olive oil soup
- Salt and pepper from the mill
Preparation
In a food processor, purée until coarse. The preparation will keep in the refrigerator for a week.
