Black garlic mayonnaise

This mayonnaise can be used almost everywhere as a replacement for standard mayonnaise. It will wonderfully enhance the taste of your sandwiches, fries, tartars, etc. In addition, it is a wonderful sauce for Chinese fondue.


  • 1 cup mayonnaise (homemade or store-bought)
  • 3 cloves of black garlic or 3 teaspoon of black garlic paste
  • 1 small clove of white garlic
  • 1 teaspoon of capers
  • 1 teaspoon caper juice
  • 1 tablespoon of maple syrup
  • Salt and Pepper to taste
  1. Pass the black garlic, capers and white garlic through a garlic press (If you don't have a garlic press, cut the ingredients as finely as possible).
  2. Mix together all the ingredients.
Prepare 24 hours in advance for an even tastier sauce.
This recipe can also be prepared without white garlic (for a milder flavor).
Keeps for several weeks in the refrigerator.
